The invention provides cell wall polysaccharide extracted from Pu'er tea as well as an extraction method and application of the cell wall polysaccharide. The invention provides a method for extracting cell wall polysaccharide from Pu'er tea. The method comprises the following steps: firstly, removing macromolecular substances such as water-soluble polysaccharide and protein; secondly, further treating the non-water-soluble residues with a certain amount of amylase so as to remove starch; then, ethylenediamine tetraacetic acid is combined with an alkali solution to extract acidic polysaccharide, and tests show that the cell wall polysaccharide extracted by the method has an immune regulation effect and has higher activity compared with polysaccharide extracted by a traditional method. Therefore, the cell wall polysaccharide in the Pu'er tea is developed and utilized by the method provided by the invention, so that the industrial added value is increased, the product variety is widened, and the method has a relatively high application prospect and a relatively high potential value..
