The invention relates to microparticles comprising a matrix consisting of casein and chitosan, and probiotic bacteria. Said matrix protects said probiotic bacteria during (i) the processing thereof, (ii) the storage thereof, and (iii) the transit thereof through the gastrointestinal tract, extending the useful life thereof.
