The present invention discloses a microcapsule wall material composition used for odor masking and a preparation method and an application thereof. The microcapsule wall material composition comprisesthe following raw materials in parts by weight: 40 parts-60 parts of octenyl succinic acid modified starch wall materials, 40 parts-60 parts of sodium caseinate and 0.3 part-1.5 parts of tannic acid.The method comprises the following steps: the octenyl succinic acid modified starch and sodium caseinate are added to water at room temperature to be stirred overnight for full dissolution; a composite is obtained; and the tannic acid is added to the composite and uniform mechanical stirring and mixing are conducted to obtain the microcapsule wall material composition. No organic solvent needs tobe added in the preparation process and the obtained product maintains biological activity, at the same time also has good oxidation resistance due to containing the tannic acid, is more conducive toprocessing, transportation and storage, and greatly improves safety and fluidity of the product..
