The invention relates to the field of food and medicine, in particular to application of mannose-rich black fungus extract in improvement of metabolic disorders and related cognitive functions. The mannose-rich auricularia auricula extract comprises auricularia auricula polysaccharide, and monosaccharide of the auricularia auricula polysaccharide comprises 82-87% of mannose and 13-17% of glucuronic acid in mole percentage. The mannose-rich black fungus extract disclosed by the invention can be used for preventing or improving cognitive impairment caused by metabolic disorder, so that a basis is provided for researching the regulating action mechanism of the black fungus and active ingredients thereof for preventing and treating metabolic syndrome and related cognitive impairment; the mannose-rich black fungus extract can be developed and applied as a medicinal component and related medicines or functional foods..
