为了回答和实证验证"猪肉可追溯体系有助于保障猪肉质量安全吗"这一现实问题,本文利用对北京、河南、湖南三省市的396家养猪场户调查获得的问卷数据,通过构建双变量Probit模型,实证分析追溯体系参与行为与认知对养猪场户质量安全行为的作用机理与作用效果。研究发现:猪肉可追溯体系有助于提升猪肉质量安全水平,具体表现在,耳标佩戴工作通过直接影响养猪场户的可追溯体系参与认知而间接影响其质量安全行为;生猪养殖环节存在质量安全隐患,主要表现为兽药使用不规范,对消费者危害最大的是使用禁用药,31. 57%的养猪场户在过去一年中使用过禁用药;生猪养殖环节开展猪肉可追溯体系建设的基础条件较好,但仍存在一定问题,尤其在耳标佩戴和检疫证获取方面需要加强监管;除了追溯体系参与认知变量,养殖方式、生猪销售方式、兽药采购方式等变量也显著影响养猪场户的兽药使用行为。最终从加强猪肉可追溯体系建设、加大猪肉可追溯体系宣传力度、鼓励规模化和标准化养殖、建立兽药销售商和生猪收购商登记在案制度与信用评级制度等方面提出对策建议。.
In order to answer and empirically verify the practical question of"pork traceability system helps to ensure the quality and safety of pork?",this paper uses questionnaire data obtained from 396 pig farm household surveys in Beijing,Henan and Hunan province,and uses the Bivariate probit model to analyze the mechanism and effect of the participation behavior and cognition on the quality and safety behavior of pig farmers. The study found that the pork traceability system helps to improve the quality and safety of pork. The specific performance is that the ear tag wear work indirectly affects the quality and safety behavior by directly affecting the traceability system of the pig farm households; the hazards of quality and safety are mainly manifested in the irregular use of veterinary drugs. The most harmful to consumers is the use of banned drugs. 31. 57% of pig farmers have used banned drugs in the past year; the basic conditions for the construction of the pork traceability system in the pig breeding sector are good,but there are still certain problems,especially in the ear tag wearing and quarantine certificate acquisition needs to strengthen supervision; in addition to the traceability system involved in cognitive variables,variables such as farming methods,pig sales methods,and veterinary drug procurement methods also significantly affect the veterinary drug use behavior of pig farmers. In the end,it proposed countermeasures from the aspects of strengthening the construction of pork traceability system,increasing the promotion of pork traceability system,encouraging largescale and standardized breeding,establishing veterinary drug sellers and pig purchasers registration system and credit rating system..
